You will want to use the scanning circuitry already built into the camera for the CRT. If you are lucky it might be on a seperate board, or it might be built into the camera main board.

If you are REALLY lucky, you can just feed the scanning circuitry a composite video signal and it will display it on the CRT. More then likely though you will need to give it horizontal and vertical sync and an appropriately timed monochrome video signal.

First step is to disassemble the camera, and look at what's happening on the wires linking the scanning circuitry to the main board. identify +5v, ground lines, sync lines and video signal.

In many cases it may be easier to interface the scanning circuitry directly to VGA output than to composite video signal... this is because you will already have seperate hsync and vsync, and you can crudely combine the R G B signals with resistors to form a sort of monochrome signal. this all depends on the sync ranges of the camera cRT driver circuitry of course. it won't meed any video standards, but depending on the display it might work...

unless you are experienced with this i recommend you look at other HMD options... i know there was a US$99 "handheld monitor" available from some surplus store in the states which included a kopin 320M, viewing optics and driver circuitry (from NTSC signal)... basically everything you need for your HMD ready to go - this might be a much easier solution. also the LCD's are much more elegant in that they are smaller, chew less power, not prone to implosion on impact and physical parts to go wrong or require calibration (yoke, deflection coils)..
